Description

Creamy banana bread with a gooey center.

Ingredients

  • 1⁄2 c butter, softened
  • 8 oz neufchatel or regular cream cheese
  • 1 1⁄4 c granulated sugar
  • 2 eggs
  • 1 c bananas, mashed
  • 1 t vanilla extract
  • 2 1⁄4 c all purpose flour
  • 1 1⁄2 t baking powder
  • 1⁄2 t baking soda
  • 1⁄4 t salt
  • 1 c raisins
  • 3⁄4 c chopped pecans or walnuts
  • 2 T brown sugar
  • 2 t ground cinnamon

Instructions

Preheat oven to 350 degrees.

Cream the butter and cream cheese together. Gradually add the granulated sugar and continue beating until light and fluffy. Add eggs one at a time, beating well after each. Stir in th mashed banana and vanilla. Add flour, baking powder, soda and salt. Mix until batter is just moist. Fold in raisins. Stir as little as possible to avoid creating gluten.

In a small bowl, mix together nuts, 2 tablespoons brown sugar and cinnamon.

Divide 1/2 batter into two greased and floured 8x4 inch loaf pans. Sprinkle pecan mixture over batter in pans, and top with remaining batter.

Bake at 350 degrees for 45 minutes or until an inserted toothpick is clean or internal temperature is 205 degrees.
