Everyday Sourdough White Bread

Description
Good enough to eat every day!
Ingredients
- 3 c fresh starter
- 1 2⁄3 c warm water
- 3 T sugar
- 3 t salt
- 1⁄2 c dry milk powder
- 1⁄4 c vegetable oil or melted butter
- 6 c bread flour
Instructions
Start by heating your mixing bowl (and dough hook if using a mixer) with hot water.
Measure your dry ingredients, melt the butter and set aside. Add the water and starter to the mixing bowl, followed by the dry ingredients. Add 3 cups of the flour and begin mixing, then add the butter (make sure it has cooled below 100 degrees).
Add about 3 to 4 more cups gradually and continue kneading until the dough is smooth and stands about 1/3 as high as it is wide when resting. Place in a greased bowl, let rise until double. Punch down, let rest 15 minutes. Shape into 3 loaves, place in greased bread pans (8 inch). Brush tops with 1 tablespoon melted margarine or butter. Let rise until tops are almost even with top edge of pan. Bake 35-45 minutes at 375. Turn out immediately onto racks. For a soft crust, rub with hard butter or margarine while still hot.
Notes
After some tinkering, we've finally settled on the ingredient ratio above. This produces consistent loaves very close to the "perfect" 1 pound, 12 ounces that fit well in the toaster and have a very rich, chewy consistency.
